Purpose statement
This module covers the skills, knowledge and attitudes required to produce dried fruits and vegetables in fruits and vegetables processing industry. It is reserved for trainees pursuing TVET certificate V in Food Processing. After completion of this module, the learners will be able to prepare tools, materials, equipment and work place, prepare fruits and vegetables, dry fruits and vegetables and store dried fruits and vegetables. They will be able to perform these tasks respecting dried fruits and vegetables quality and safety standards.

It is reserved for learners pursuing TVET Certificate V in food processing. Upon completion of this module the learner will be able to receive roots and tubers ,prepare roots and tubers, make starch and make crisps
