  Introduction

   Ham making is an important sub-sector in meat processing in Rwanda. The demand of ham is increasing due to the adoption of eating processed meat products, demand of convenient food and need for meat products of longer shelf life. Ham making involves processing of raw meat from pig into cooked, dried and smoked ham.
