      Introduction

      Before being transformed into different products, fish must be pre-processed to preserve quality and reduce contamination or spoilage. There are four steps involved in pre-processing a fish including removal of slime, scaling, gutting, and filleting.

      In this e-lesson, you will learn how to perform each step correctly so that you can effectively pre-process fish at home and at your workplace.
